The Holiday Drink – A Recipe

We present an easy interpretation of a drink featured on a new menu. It's a large-volume pre-mixed that's loaded with the flavours of a festive period, making it perfect for a celebration. Any leftover syrup for brunch beverages, sweets, or for another batch of bikinis.

The Bikini Cocktail

Serves 10 servings

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Drink (produces 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Place all the items into a saucepan, heat until it reaches a light boil, stirring until the sugar dissolves. After that, turn off the heat and leave to cool down entirely. Decant to a sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for about one month.

To make Batch Mix: Pour the specified spirits and syrup into one large bottle, leave to sit for an hour, then filter it , ideally through a fine cloth, so it's perfectly clear.

For serving: Measure 85ml from the premix into a stirring glass filled with ice, and agitate carefully for a minute to cool it down. Pour to a frosted cocktail glass or similar, top with a few cranberries and complete it by giving it a light spray of the essential oil over the top.
